Shortbread

These very simple homemade shortbread biscuits are so buttery and delicious, they are perfect for an afternoon treat with a cuppa tea and store very well in an air tight tin.

Ingredients:

  • 175g (6oz) salted butter, softened
  • 75g (3oz) caster sugar, plus extra for dusting
  • 225g (8oz) plain flour
  • 25g (1oz) cornflour

Method:

  1. Preheat the oven to 170ºc / Gas 3. Line a 10inch baking tray with baking paper.
  2. Whisk together the butter and sugar together until smooth.
  3. Gradually sift in the flour and cornflour and mix together until smooth.
  4. Press the mixture into the tin and level out.
  5. Bake in the oven for 30mins until pale and golden.  Leave until cold, then cut into bite size chunks.
