These very simple homemade shortbread biscuits are so buttery and delicious, they are perfect for an afternoon treat with a cuppa tea and store very well in an air tight tin.
Ingredients:
- 175g (6oz) salted butter, softened
- 75g (3oz) caster sugar, plus extra for dusting
- 225g (8oz) plain flour
- 25g (1oz) cornflour
Method:
- Preheat the oven to 170ºc / Gas 3. Line a 10inch baking tray with baking paper.
- Whisk together the butter and sugar together until smooth.
- Gradually sift in the flour and cornflour and mix together until smooth.
- Press the mixture into the tin and level out.
- Bake in the oven for 30mins until pale and golden. Leave until cold, then cut into bite size chunks.
