Roasted garlic new potatoes

I made these potatoes with my Cheesy cod gratin, but are great as a side dish with chicken too.

Ingredients:

  • 1kg small new potatoes
  • 2 tbsp. olive oil
  • 2 garlic cloves
  • 1 tsp sea salt, crushed

Method:

  1. Preheat the oven to 220ºc/425ºf/Gas 7. 
  2. Bring a large saucepan of water to the boil then add the potatoes for around 10mins and drain well.
  3. Add the potatoes to a baking tray, cover with olive oil and cook in the oven for 45mins, turning over half way through until golden and crispy.
  4. Remove the potatoes from the oven and add the garlic, tossing the potatoes around so they are coated all over in the garlicky oil.  Season with the crushed salt and serve hot.
