I never really knew what to do with butternut squash so one Sunday I decided to roast it and oh wow, I really enjoyed.
Ingredients:
- Butternut squash
- Vegetable oil
- Sprinkle of mixed herbs
Method:
- Preheat the oven to 210ºc
- Cut the butternut squash in half, peel the skin off and deseed. Cut the butternut into chunks.
- Heat some vegetable oil in the oven, once heated up, remove and toss the butternut until coated.
- Sprinkle with mixed herbs and place back in the oven. After approx 25-30mins, remove from the oven and turn over and place back in until crispsy.
- Remove and serve immediately.
