Roasted butternut squash

I never really knew what to do with butternut squash so one Sunday I decided to roast it and oh wow, I really enjoyed.

Ingredients:

  • Butternut squash
  • Vegetable oil
  • Sprinkle of mixed herbs

Method:

  1. Preheat the oven to 210ºc
  2. Cut the butternut squash in half, peel the skin off and deseed.  Cut the butternut into chunks.
  3. Heat some vegetable oil in the oven, once heated up, remove and toss the butternut until coated. 
  4. Sprinkle with mixed herbs and place back in the oven.  After approx 25-30mins, remove from the oven and turn over and place back in until crispsy.
  5. Remove and serve immediately.
