This tastes very similar to a minced kebab cooked on a delicious homemade flatbread, served with some chilli cause, salad and chips. An ideal summers dinner.
Ingredients:
- 1 tbsp vegetable oil
- 1 onion, thinly sliced
- 1 tsp ground coriander
- 1tsp ground cumin
- 1 tbp ground baharat spice
- 500g minced lamb
- 75g saltanas
- 300ml chicken stock
- Salt and pepper
- 250mlt natural yoghurt
- 2 green chillis or pickled jalopenos
- 6 flatbreads
Method:
- Heat a pan until hot, add the oil, shallots, garlic and spices and cook for a couple of minutes.
- Add the lamb, mixing in all the spices and breaking up the lamb into pieces and cook until all browned.
- Add the sultanas and chicken stock, bring to boil, then reduce the heat and smimmer for 20 mins until the lamb is tender and the liquid virtually gone. Season to taste and allow to cool totally.
- Pre-heat the oven to 180ºc, cover each flatbread then evenly scatter with the mince mixture, yoghurt and salt and pepper.
- Place on a baking tray and cook for 5-10mins until heated through.
