Chilli Chicken Noodles

I was inspired by a prawn noodle recipe from Ping Coombs, so I made this version with chicken with some prawn crackers on the side and it was amazing….try substituting the chicken for prawns or tofu

Serves 4

Ingredients:
  • 3 tbsp vegetable oil
  • 2 garlic cloves, crushed
  • 3 chicken breasts, cut into small cubes
  • 1 tomato, cut into 6 wedges
  • 400g fresh yellow noodles (or you can use the dried nests and cook according to the packets, drain and leave to one side)
  • 2 spring onions, sliced
  • 100g bean sprouts
  • crispy onions, to serve

Chilli paste

  • 3 fresh red chillies
  • 1 tbsp water

For the sauce

  • 1 tbsp light soy sauce
  • 2 tbsp oyster sauce
  • 3 tbsp tomato ketchup
  • 1 tsp dark soy sauce
  • 1/4 tsp salt

Method:

  1. Put the chillies and water in a small blender and blitz to form a paste.
  2. Next make up the sauce, mix all the ingredients for the sauce in a small bowl and set aside.
  3. Heat the oil in a large frying pan or wok and fry the chicken until cooked, this may need to be done in batches.  Remove and set aside.
  4. Using the same pan (no need to clean as you will get more flavour), add the garlic and chilli paste and fry for 1min. Return the chicken to the pan and stir ensuring the chicken is fully coated in the chilli sauce.
  5. Add the noodles, the sauce, spring onions and bean sprouts and mix well.
  6. Check the seasoning and serve immediately with crispy shallots.

Top tip: you can make your own crispy onions, but shop bought are just a nice.
