This is a quick dinner to make and is very delicious. You can match this up with pasta, rice or potatoes…roasted or mashed.
Ingredients:
- 200g mushrooms, sliced
- 3 tbsp salted butter
- 2 tbsp olive oil
- 1 onion, peeled and sliced
- 1 garlic clove, crushed
- 1 tsp paprika
- Salt and pepper
- 100ml white wine
- ½ tbsp tomato puree
- 400ml chicken stock
- 640g chicken breast, cut into bite size chunks
- 4 tbsp reduced fat sour cream (you can use full fat if you prefer)
Method:
- Heat 2 tbsp butter and oil in a pan and fry the chicken pieces until brown and then set aside.
- In the same pan, add the remaining butter and fry the onions until soft.
- Add the garlic and mushrooms and cook for around 5mins. Add the salt, pepper, paprika and wine and stir until the wine has reduced.
- Stir in the tomato paste and stock and simmer for 5mins.
- Return the chicken to the pan and simmer until the chicken is cooked through.
- Add the sour cream and serve immediately along with pasta, rice or potatoes.
