Chicken stroganoff

This is a quick dinner to make and is very delicious.  You can match this up with pasta, rice or potatoes…roasted or mashed.

Ingredients:

  • 200g mushrooms, sliced
  • 3 tbsp salted butter
  • 2 tbsp olive oil
  • 1 onion, peeled and sliced
  • 1 garlic clove, crushed
  • 1 tsp paprika
  • Salt and pepper
  • 100ml white wine
  • ½ tbsp tomato puree
  • 400ml chicken stock
  • 640g chicken breast, cut into bite size chunks
  • 4 tbsp reduced fat sour cream (you can use full fat if you prefer)

Method:

  1. Heat 2 tbsp butter and oil in a pan and fry the chicken pieces until brown and then set aside.
  2. In the same pan, add the remaining butter and fry the onions until soft. 
  3. Add the garlic and mushrooms and cook for around 5mins.  Add the salt, pepper, paprika and wine and stir until the wine has reduced.
  4. Stir in the tomato paste and stock and simmer for 5mins. 
  5. Return the chicken to the pan and simmer until the chicken is cooked through. 
  6. Add the sour cream and serve immediately along with pasta, rice or potatoes.
