Chicken quesadillas

In my house, these are called chicken pancakes!  Making these are a great way of using up any leftover roast chicken. 

Serves 4

Ingredients:

  • 2 large chicken breasts, cooked or any left over chicken, roughly chopped up
  • 8 Flour tortillas
  • Jar spicy salsa (or tomato puree and oregano)
  • 1 bunch of spring onions, sliced
  • 150g cheddar cheese, grated (more if you like them really cheesy)

Method:

  1. Lay out 4 tortillas on the chopping board.  Spread each one with salsa (or tomato puree sprinkled with oregano).  Divide the chicken, spring onions and cheese between them.  Top each one with the remaining tortillas.
  2. Heat a large non-stick frying pan over a medium heat.  Add one sandwich to the pan for approx 2 mins, pressing down firmly with a spatula, until the quesadilla is  lightly golden on the bottom.
  3. Remove pan from the heat and place a large plate over the pan, turn the pan upside down to turn the quesadilla out on to the plate.  Slide the quesadilla back into the pan (uncooked side down) and cook for a further 2 mins, until you can see the cheese has melted.
  4. Repeat with the remaining quesadillas until all are cooked.  Cut into wedges and serve with salad and onion rings.
