Cheese sauce

This is a perfect cheese sauce that you can use for Cauliflower cheese or Macaroni cheese.

Ingredients:

  • 40g (1½oz) salted butter
  • 40g (1½) plain flour
  • 600ml (1 pint) semi skimmed milk
  • 250g (9oz) cheddar, grated

Method:

  1. In a large saucepan, melt the butter over a medium heat.  With a large hand whisk add the flour and whisk continously for a minute.  Top tip: I find using a large hand held whisk, you are less likely to have lumps.
  2. Gradually whisk in the milk, a little at a time. Cook for around 10 mins until thickened and smooth.
  3. Remove the sauce from the hob, add the cheese and stir until it is well combined and melted.
