This weeks highlights

Happy new year everyone, hope you had a lovely break, I know I did spending time with family and friends.  So this is the first full week in January 2020 and it’s started off being very busy already with lots of cooking and baking. 

I think my favourite this week was Beef Goulash, this wholesome dish is great this time of the year which can be served with either rice or mash and vegetables or there’s Chicken casserole, served with a crunchy french stick to mop up all the juices, it’s very hard to choose between these two comfort food dishes.

For a mid-week dinner, you can’t beat a rich, tomatoey Lasagne which is great for a mid-week dinner, served alongside garlic bread and salad.

I had some left over spinach and so made a Cheesy spinach bake to go along side my roast, it was so tasty that I’d eaten most of it before I had dished up dinner!

I know it’s January and after all those calories in December, I couldn’t help but make these Frosted chocolate cupcakes….they were so addictive.
